Paleo Pumpkin Bread

This is a gluten-free, paleo-based bread that is ridiculously delicious! It’s light and moist and healthy too!

 

What’s so healthy about it?

Well, as you might expect from the rich orange colour, pumpkins are chock-full of beta-carotenes, the vitamin A precursor and powerful antioxidant, protecting us against oxidative stress, cancer, respiratory and cardiovascular conditions and eye health.
In addition, the added almond meal, coconut oil and eggs add a great abundance of good fats, protein and fibre – making this loaf an awesome alternative to your regular grain bread and oh so much yummier!

 

Ingredients:
4 cups grated pumpkin

4 cups almond meal

4 organic or free range eggs

3 tbsp coconut oil

1 tbsp honey

1/4 tsp nutmeg

pinch of salt

1/2 tsp baking powder

Method:
Preheat oven to 175 C and line a loaf tin with baking paper.


In a large mixing bowl, combine all the ingredients together and mix until well combined.


Spoon the mixture into the loaf tin and bake for 1 – 1.5 hrs.

This will depend on your oven temperature. The loaf should be a dark golden brown when ready.


Cool and enjoy!!!

 

TIP: It’s delicious with avocado and tomato.

TIP: It’s also nice with nut butters or simply on it’s own.
