With Air Fryers being quite the rage, I thoughts I’d find a recipe that is easy and healthy, that will also temp the kiddies to eat their vege.

Air Fryer Appetizer Plate

EQUIPMENT

  • Air fryer
  • Food processor for pesto

INGREDIENTS 

  • 2 large zucchini cut into ‘fat chip’ size sticks
  • 1 large carrot cut into ‘fat chip’ size sticks
  • 1/4 cup coconut milk
  • 1/4 cup coconut flour
  • 1 tblsp nutritional yeast
  • 1/2 tsp Himalayan salt
  • 1 tsp garlic powder
  • 1 tsp garlic powder

INSTRUCTIONS

  • Beat the coconut milk in a mixing bowl.
  • Combine coconut flour, nutritional yeast and spices in a separate bowl. 
  • Arrange your plate of zucchini and carrot chips to the left, the egg bowl next, and the flour/spices last. Take each piece of zucchini and carrot and coat it in the egg; then dredge it into the flour mixture until coated.
  • Arrange zucchini wedges in a single layer in fryer basket, skin side down without touching. Depending on the size of your air fryer, you may need to work in batches. “Fry” your zucchini at 200 ° C (390/400 ° F) for 15 minutes or until they are golden brown. Serve warm with coriander pesto.

Coriander Pesto 

Ingredients

  • 2 cups coriander leaves
  • 1/4 cup extra virgin olive oil light is better for taste
