Asian Veggie Noodle Bowl

Here is a great recipe that is wonderful if weight loss is on your agenda right now. The zucchini noodles satisfy any carb cravings, and this recipe will leave you feeling nourished and light.

2 serves


  • 2 med zucchini
  • 3/4 cup carrot grated or julienned
  • 1/2 cup red cabbage chopped
  • 1 med cucumber cut into moons
  • 2 shallot chopped
  • 1 tbsp coconut oil


  • 2 tbsp coconut aminos
  • 1/2 tsp ginger paste or grated ginger root
  • 1/2 tsp Himalayan salt
  • 1/2 tsp onion powder
  • 1 tsp garlic powder


  • Place a pan on the stove and set to medium/low heat
  • Melt the coconut oil in the pan
  • Add the zucchini to the pan and cook for 2-3 minutes. The noodles should be lightly sautéed, but still crunchy
  • In a separate bowl, combine the hot noodles with all the other salad ingredients
  • In a second small bowl, combine the sauce ingredients with a whisk
  • Pour the sauce over the noodle bowl and serve. Enjoy!
