Spiralised Cucumber Prawn Salad

Enjoy this delightful Summer Salad recipe! Tantalise your tastebuds whilst nourishing your body with iodine and fresh crunchy vegetables!

Ingredients

  • 500g prawn meat, cooked and deveined 
  • 2 cucumbers, spiralized 
  • 1/3 cup red onion, sliced finely 
  • 1/2 cup mango, cubed 
  • 1/2 cup coriander 

Dressing

  • 1/4 cup olive oil 
  • 1/4 cup fresh lime juice 
  • 1 tbsp honey 
  • 2 cloves of garlic, minced 
  • 1 tsp Himalayan pink salt

Instructions

  1. Whisk together all dressing ingredients.
  2. Set aside.
  3. Add all salad ingredients into a large bowl.
  4. Pour dressing over salad and toss to combine.
  5. Serve and enjoy!
