- 500g prawn meat, cooked and deveined
- 2 cucumbers, spiralized
- 1/3 cup red onion, sliced finely
- 1/2 cup mango, cubed
- 1/2 cup coriander
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1 tbsp honey
- 2 cloves of garlic, minced
- 1 tsp Himalayan pink salt
- Whisk together all dressing ingredients.
- Set aside.
- Add all salad ingredients into a large bowl.
- Pour dressing over salad and toss to combine.
- Serve and enjoy!
